Faisal, Had read your response with great interest. If you wonder why Christians do not do the things that you have mentioned in your posting, there is a good reason : The Word of God, to Christians, ( the New Testament, or Greek Scriptures ), is the book of the "New Covenant" between God and humanity. This "New Covenant" got its start with the death and resurrection of Jesus.

On the giving of the "sign of peace", that is done today in the Roman Catholic Mass. The Bible in the Christian scriptures do state the giving of the greetings of peace. On the dietary laws, the reason why Christians are not bound to them is based in the Acts of the Apostles, not only when the early Christian church in Jerusalam put together the simple rules not only for the gentiles who became Christians are to observe, thus freeing them from observing the difficult Jewish kosher laws.

Also in Acts, Peter got a vison from God who commanded the Christian community, in chapters 10-11, to no longer be bound by the Jewish dietary laws. The reason why Christians are not "circumsised ", is because that pratice is replaced by the beautiful ritual of baptising persons into the Christian faith. Baptism is the spiritual circumsisim of the Christian believer. The reason why Christian women do not cover their heads is that the Bible says only when Christian women are at public worship and not when women are not at public worship.
