I don't think there is a passage in the Q'uran that mentions that rats aren't inpure. While you do find this about dogs.

Actually, dogs are not mentioned in the Quran with regard their purity with the small exception of ruling whatever they hunted and caught pure to eat.

Also, the prohibition of pigs and or dogs did not make them extinct...pigs just weren't used domestically, so surely they thrived in the wild - and dogs were still kept as hunting and shepard dogs, so they were not in danger of extinction either.
