Are you sure she is a true Muslim? Many if her actions don't show that.

A few things:

1: muslim men can marry non-muslim women who convert but muslim women cannot marry a non-muslim man who converts

I do not believe you converting would matter for this reason

2: where is her husband/father of her children? I think it's interesting if her ex was a Muslim man that she would be divorced or widowed, with kids and now DATING you

Rare.

3: simply ask her plans for your futures. Is it marriage or is it just to stay dating? A muslim woman marrying a non-muslim man would be rare and she must not be too strict in Islam so maybe it isn't a matter but I wouldn't expect marriage out of this.

Hopefully you're not financially supporting her because that would be the reason for her being open to this relationship, for now.
