Not a real answer to racist accusations

I don't think the correct answer to accusations of anti-muslim racism is to define very narrowly what is racism, and then to deny that someone is racist because s/he doesn't fit that definitition. Maybe a new word should be devised, but isn't discrimination against somebody based solely on their gender, ethnicity, religion, sexual orientation, etc, basically racism? Or at least what comes to the collective mind when that word is used? It's like saying that denying women the right to vote (for example) is not racism because it is not based on race, but on gender. And I believe that racism, in social sciences at least, is not defined solely on the basis of race....
