Who handles the booze at Dubai Duty Free?

Is someone going to tell me that no Muslims are involved in the procurement, transportation, stocking, promotion, or selling of (tons of) alcohol at Dubai Duty Free? From their web site: "Liquor and Tobacco: The world's best-known spirits, wines and champagne, and top-selling brands of cigarettes, cigar and tobacco." (see http://www.dubaidutyfree.com/cgi-bin/ddf.storefront/4569cf0b00154e1627220a0112200599/UserTemplate/45)

If not, then why do Muslims refuse to carry passengers carrying small amounts of alcohol?
