Sep11 was successful due mainly to the element of surprise: it was the first time hijacked planes were used as suicide missiles. All the cabin crew responded on the basis of previous hijacking patterns. However, even without this, your plan is not workable. If you slit enough throats from among the passengers and crew, sooner or later pilots will open those locked doors and their guns will be of no use to them. The jihadists know how much leverage is gained by hostage taking. They've had a lot of practice with the Israelis especially. As another poster has pointed out, armed citizenry is also available to American Muslims, so jihad on the ground will only lead to pointless bloodshed.
