I'm happy to read that you and your girlfriend are of mixed faith... However, try marrying her if you want to see the pressure you'll be put under to become a muslim. She will most likely not be permitted to marry you if you are not, and converting from her religion to yours is also a big no-no. In fact, to do so in the middle east is a death sentence.
