To say that islamic scripture proscribes violence or whatever, therefore those acting in its name are not really representing Islam is like saying people acting a way not in keeping with the US Constitution are not really acting on behalf of America.

What the REALITY is that American policy is what it is, and Islam is what it is today, here and now, regardless of any centuries-old text.
Rather than acting sensitive and thin-skinned, point out examples demonstrating how the principles of these documents are being upheld to offset the criticisms.
