You say that killing unbelievers is allowed if the Ummah is being attacked and jihad is only to be used in defense. In 1993 the WTC was bombed in NYC; Muslim terrorists tried to bring it down then but did not succeed. On September 11, 2001 they did succeed. This all happened WAY before we went to Iraq.

Also, an "attack" on Islam has a very elastic interpretation by Muslims. It can mean putting a KFC in Pakistan, or a Victoria's Secret in Saudi Arabia or simply just vigorously resisting the expansion of Islam; we aren't consenting to become dhimmis fast enough.

Lastly, you speak about the interpretation of Islamic verses. Well, there are Imams ALL OVER THE WORLD who are very publicly using the Qur'an to justify what the extremists are doing. Since there is not a central figure who represents Islam, who is to say which interpretation is correct? In other words, who can say that the so-called "extremist" interpretation is not the correct one and that they are not simply following what Mohammed commanded them to do?
