Under Egyptian Islamic law there is to be no show of affection between males and females in public places. Therefore, holding hands is not permitted in public. With regards to site seeing there may also be problems because he is not a licensed tour guide nor does he have the appropriate papers to be with you. In saying that, the monitoring of this law is more relaxed in Cairo than in say, Luxor, Aswan, Hurghada or Sharm so you should be okay. Just ask your man on his feelings about this. Best wishes.
