A rather simple answer

"...why does so much of the Muslim world restrict freedom in so many forms?"

Because Islam (like communism) is based on hate and perceived oppression--nevermind that it's a replacement of a bad oppression with a worse one.

Easily shown by the collaboration of Haj-amin Husseini with Hitler (because of this affinity in addition to a common hatred against Jews) and the Naziesque rule of many Muslim governments including Pakistan (shown by 1971 "Operation Searchlight" and later misrule by Zia***) and Sudan (documented atrocities in Christian-majority southern areas of the country, and grossly-Muslim-majority Darfur).

***In the 1984 interview with CBC's late Barbara Frum, Jatoi stated that Zia had done "atrocities in Sindh which surpassed 'Searchlight'", an idea which meets with much incredulity amongst Banglas who point out that the 2.3 million Muslims, 1 million Hindus and 200,000 others murdered in "Searchlight" made it second (in 20th century) to the Nazi Holocaust in scale.
